Candied Jalapeños – Balanced Sweet Heat Edition

Ingredients
- lb fresh jalapeños (sliced into rings)
- 2 cups granulated sugar
- 2/3 cup apple cider vinegar
- 1/4 tsp turmeric
- 1/4 tsp celery seed
- 1/2 tsp garlic powder (optional)
- 1/4 tsp cayenne pepper OR 1/4 tsp Dragon H3AT (recommended)
- 1/4 tsp Tobias Garlic Salt (finish balance)

Method
1. In a saucepan, combine sugar, vinegar, turmeric, celery seed, garlic, and cayenne or Dragon
H3AT. Bring to a boil, then simmer 2–3 minutes.
2. Add sliced jalapeños and simmer for 4–5 minutes until slightly softened.
3. Remove jalapeños with a slotted spoon and set aside.
4. Increase heat and reduce syrup for 5–7 minutes until slightly thickened.
5. Return jalapeños to the syrup. Add Tobias Garlic Salt and stir gently.
6. Transfer to sterilized jars and allow to rest at least 24 hours before use.
Chef Notes:
• Dragon H3AT adds a deeper, more complex heat than cayenne.
• WARNING: Dragon H3AT is extremely hot — use with caution and adjust to taste.
• Adding the garlic salt at the end preserves its flavor and balances sweetness.
• Best flavor develops after 2–3 days.
• Ideal for burgers, tacos, charcuterie, and cream cheese dips.
