Meet Our Team

PSI Legacy Food LLC is a family-run business that will not only bring you various meal enhancing products, but will also post coveted recipes from time to time on our website. Owners George and Claudia Botoulas invite you into our home.

Our founders have both a combination of multi-generational restaurant and food service experience and grew up with authentic recipes that have been passed down from generation to generation, never to make their way to print until now.

George and Claudia Botoulas

Born in Miami, Florida, George moved with his parents to Lake Placid, NY when he was 5 years old.  He was immediately immersed in the restaurant business as his father was an executive chef for many of the larger hotels throughout the Miami – Ft Lauderdale area.  His parents purchased the LeBourget Restaurant from his grandfather upon their arrival in Lake Placid.  His grandfather at the age of 65, not accustomed to retirement, eventually started another restaurant, known as THE CHARCOAL PIT.  This 250-seat steakhouse was known for its various cuts of USDA Choice and Prime cuts as well as authentic lamb, pasta, and veal recipes – all grilled over open charcoal briquets for truly unique flavor.   Eventually, in 2001 the LeBourget Restaurant was transformed into PETE’S STEAKHOUSE, another prime steakhouse in the family.  George finished High School in Lake Placid and was accepted into the United States Naval Academy with the Class of 1992.   He graduated from Annapolis and was commissioned as a second lieutenant in the United States Marine Corps, serving as an Infantry Officer for almost 6 years before separating.

Claudia was born in Leon, Guanajuato, Mexico. Her Mother was a traditional stay at home Mom – raising a family of 6, while her father, an accomplished attorney – was also part of the state political legislature and notary public. Claudia moved to the United States when she was 16, staying with relatives in Wichita, KS and attending Wichita State University until she decided to enlist in the United States Marine Corps. She completed a successful enlisted spending many years with the Headquarters and Service (H&S) Company for the Marine Security Forces of Guantanamo Bay, Cuba and as the lead administrative clerk for the Marine Air Training Wing in Pensacola, Florida.” She separated at the rank of Sergeant and eventually moved to Ohio with her husband, George. Claudia now spends time with her family and is a celebrated and loved Spanish Teacher for the North Olmsted School District.
