Bold Garlic-Herb Parmesan Pizza Sauce

A pizzeria-style sauce built with layered garlic and onion flavor—fresh aromatics sautéed for sweetness and depth, supported by granulated spices for balance, consistency, and professional control.
Ingredients
Fresh Aromatics
• 2 tbsp extra-virgin olive oil
• ½ cup finely diced yellow onion
• 4 cloves fresh garlic, finely minced
Sauce Base
• 1 can (28 oz) crushed tomatoes or smooth tomato puree
• 2½ tsp granulated garlic
• 2 tsp granulated onion
• 1 tbsp dried oregano
• 1 tbsp dried parsley flakes
• 1–1¼ tsp kosher salt, to taste
• ¾ tsp freshly ground black pepper
• 1½–2 tsp sugar
• ¼ cup finely grated Parmesan cheese
• Optional: pinch red pepper flakes

CHEF’S METHOD
1. Heat olive oil over medium-low heat. Add diced onion and cook 5–7 minutes until translucent.
2. Add garlic and cook 30–45 seconds until fragrant. Do not brown. Remove from heat.
3. In a mixing bowl, combine tomatoes, granulated garlic, granulated onion, oregano, parsley, salt, pepper,
and sugar.
4. Stir in sautéed aromatics until fully incorporated.
5. Fold in Parmesan cheese until dissolved.
6. Rest sauce 20–30 minutes before use. Do not simmer.
