Queso Fundido Blanco with Chorizo & Tradecraft Scorpion

Ingredients

  • ½ lb Mexican chorizo
  • 1 lb White American Cheese (or elite blend)
  • ½ cup whole milk or cream
  • 1 tbsp butter
  • 1 small can diced green chilies
  • 1 fresh jalapeño (diced)
  • Pinch Tobias Garlic Salt
  • 1–2 tsp Tradecraft Scorpion Hot Sauce
  • Optional: micro pinch DRAGON H3AT (extremely hot)

Instructions:

1. Cook chorizo over medium heat, breaking apart. Leave a small amount of fat in pan.
2. Reduce heat to low. Add butter, milk, chilies, and jalapeños.
3. Slowly melt in cheese, stirring constantly.
4. Fold chorizo back into queso.
5. Add Tobias Garlic Salt and Tradecraft Scorpion Hot Sauce to taste.
6. Optional: transfer to cast iron and broil 2–3 minutes for finish.

Chef Notes:

– Tradecraft Scorpion adds heat and acidity—build gradually.
– DRAGON H3AT is extremely hot—use with caution.
– Keep heat low to prevent breaking.
– Chorizo fat enhances flavor and texture.
